Great wines are made in the vineyard!
Following this principle, Vineyard Manager Joachim Jaillet leads his talented team who work with unfailing energy, meticulousness and innovation to take advantage of our vineyards’ great potential. Our aim is to never disturb the ecosystem of the vineyard, but rather to support it.
We practice organic and sustainable viticulture 100% free of synthetic fertilizers and herbicides. In 2008 we established our first vineyard based on high-density planting common in the Burgundy region of France. Planting 9,500 vines/ha (23,500/acre) instead of under 5000 vines/ha (12,300/acre) leads to a competitiveness amongst the individual grape vines and a natural reduction in yields per vine with better root development. With the focus on quality not quantity we are planning to employ this method in the future in all of our premium vineyard sites.
The deep rooting of the vines not only results in the distinct character of our terroir is expressed even more distinctively in the grapes and, consequently, in our wines but it also makes our vines capable of withstanding extreme weather conditions such as a heat wave or heavy rain. A guaranteed water supply makes our vines less sensitive regarding rivalry with other plants allowing for a rich diversity of flowers in the vineyard. This, in turn, attracts many beneficial insects which support the biodiversity and richness of our ecosystem.
The soils of these special vineyards are worked cautiously with a narrow-track plow. Our understanding of the vineyard as an ecosystem and the encouragement of natural processes, combined with uncompromising, quality-driven work on the vine enables us to produce perfect grapes. From their arrival in our cellars and until they become fine wines, they are handled gently and with great respect.
